Fish and shellfish, salads, fresh cheeses, pozoles. It goes very well with Mexican and oriental dishes, Cabuche and acamaya salad goes well too. Recommended temperature: 12 - 13°C (53 - 54°F)
Vinification is done through controlled fermentation of destemmed and crushed grapes at 15°C
Pale yellow color with green reflections; citrus aromas, hints of white peach, lychee, fresh jalapeño, grass, and thyme; great freshness, balance and minerality.
