Winemaking & Profile
Style: Natural red wine, crafted with the least intervention possible both in the vineyard and the winery. No added yeasts or sulfites.
Process: Made using carbonic maceration to preserve the crisp freshness of the youngest grapes in our vineyard.
Aging: Unoaked. It transitions directly from stainless steel tanks to the bottle, making it an easy-drinking and highly versatile wine.
Tasting Notes
- Appearance: Intense red color with bright crimson rims and medium-high concentration.
- Nose: Highly aromatic and expressive. Elegant aromas of young red fruits dominate, highlighting fresh strawberry and raspberry, beautifully intertwined with herbal and spicy notes of rosemary, black pepper, and a delicate touch of clove.
- Palate: An amiable and welcoming entry (ataque amable) with a medium presence on the palate. It features well-balanced, structured tannins and a crisp acidity that keeps it lively, fresh, and juicy.
Service Temperature: Serve slightly chilled between 12–16°C (53–61°F) to enhance its natural freshness.
Food Pairing: Exceptionally easy to pair. Highly recommended for cold and hot seafood dishes, traditional Mexican gastronomy (such as tacos al pastor or mole with subtle sweet and spicy notes), charcuterie boards, pork chops, and lean cuts of meat.
