The Jabalí agave scientifically known as Convallis is endemic to the state of Oaxaca, it is one of the most complex mezcal agaves to elaborate due to the amount of saponins that this type of agave has that make the grinding, fermentation and distillation process difficult. Saponins are organic compounds that cause a high concentration of foam, which is why our master mezcalero Benito Santiago, with dedication and great experience, manages to create this unique distillate for your enjoyment.
At first Nose we can appreciate Fresh and citrus notes, when opening, our Wild Boar shows herbal notes of dill, as well as a slight smoky note.
In the mouth we can distinguish a pleasant freshness and sweetness to the palate to later give way to a medium astringency and a characteristic note of our Jabalí, a slight numbness of the lips and palate, a tingle full of flavor and the essence of a great artisan mezcal of Oaxaca.
