Winemaking & Aging Sourced from high-altitude vineyards in the Sierra de Arteaga at over 2,100 meters, where pine forests surround the vines and cold nights slow the ripening process, preserving natural acidity and aromatic finesse. Fermented entirely in stainless steel tanks to protect the variety's delicate citrus and floral character. No oak contact — a wine that speaks purely of its mountain terroir.
Tasting Notes
- Appearance: Straw yellow with golden glints, clean and brilliant.
- Nose: Medium intensity, with citrus aromas of lemon zest and green apple, complemented by subtle white flower notes such as chamomile, and delicate hints of honey and beeswax.
- Palate: Fresh, with vibrant acidity and excellent length on the palate. Citrus notes — particularly apple — are prominent, alongside subtle tropical fruit nuances of pineapple. Elegant, with a pleasant slight unctuousness.
Food Pairing This Riesling is an ideal companion for oysters and seafood, fatty fish, Japanese and Asian cuisine — nigiri, sashimi — light pork preparations, salads with nuts, mushrooms, white pasta, soft cheeses, and creamy desserts. Its acidity and aromatic complexity make it remarkably versatile at the table.
Serving Temperature Recommended to serve between 7–10°C (45–50°F).
The Los Cedros Riesling Story Born at altitude, shaped by contrast. The Bodega Los Cedros Riesling is a testament to what happens when one of the world's most noble white varieties finds a home at over two thousand meters, where the mountain air, the pine forest, and the drama of hot days and cold nights conspire to produce something truly singular — a high-altitude wine of purity, freshness, and quiet elegance.
