Recommended to accompany with cheeses, sausages, fresh seafood, lobster, ceviches, sushi, beef carpaccio and paella. Recommended temperature: 16°C (60°F)
On the nose you will find guava, grapefruit, lychee, flowers, watermelon and white. On the view: Salmon tones with flashes of coral in the center. Clean, very bright and translucent and on the mouth: good structure, dominated by red fruits with a mineral finish. Present and refreshing acidity that accompanies a long-lasting and fruity stay.
A rosé made from the vineyard. The grapes are harvested around 21 °Bx to prioritize acidity and the provensal profile. It is macerated in a tank for 8 hours and pressed at medium intensity. Fermentation at 17 °C. Yeast and nutrient are selected to generate thiolic aromas (tropical and citrus). The MLF is inhibited with the use of temperature and sulphites and a double filtering is carried out before bottling.
2020 started with a long and cold rainy season (500 ml) followed by a mild spring and early summer. Summer brought average temperatures but was followed by a very strong heat wave that accelerated the ripening of some of the late varieties and generated strong fires in the region. A mild summer allowed for fantastic acidity retention that allowed us to seek further ripeness without sacrificing freshness.
