Aging:  Maceration of the skin, pressing under nitrogen and aging on the lees.

Region:  Appellation IGP Côtes de Gascogne, France

Food pairing: Grilled goats cheese salad, pan-fried salmon or courgette and lemon zest risotto. The aromatic aspect of the wine mean it could even stand up to some subtle asian spiced grilled chicken.

Recommended Service temperature: 12–13 °C (53–55 °F).

Tasting Notes:

1. It looks like yellow straw color with golden trim.
2. In the nose it has fruity notes, passion fruit, lychee, pineapple, subtle mineral aroma and white flowers and on the palate it is very refreshing
3. On the palate, sweet, the olfactory part is confirmed, refreshing acidity, beautiful finish.
   

Wine Profile:

Established in Gascony in 1920 by an adventurous Swiss winemaker, Jean Francois Morel. After starting with only 10 hectares Domaine Haut-Marin has now expanded to 270, but remains a family run enterprise to the present day, creating thirst quenching, fruit-forward wines. Elizabeth Prataveira, the 4th generation winemaker and owner, works alongside her brother Philippe who focuses on caring for the vineyards. The land of what is now the domaine was covered by the sea 23 million years ago, and so the soils are full of ancient marine fossils which are referenced in the names and labels of their wines.
