Pairing Suggestions:
An original wine, very harmonious, pleasant, and fragrant. Freshness and fruitiness are its main characteristics. Ideal for warm days. It is recommended to drink it very cold to accentuate its qualities.
It pairs well with fresh dishes, seafood, oysters, mussels, abalone, ceviches, sashimi, tartare, salads with red fruits, lightly seasoned fish, goat cheese. In terms of Mexican cuisine, it pairs excellently with chiles rellenos (stuffed with cheese) and tikin xic fish.

Recommended Serving Temperature: 6-8°C (42-46°F)

Tasting Notes:

  1. Appearance: A Provencal pink with salmon hues, elegant with coppery highlights. Very clean, bright, and luminous. Medium density with excellent visual appeal.
  2. Nose: Medium-intensity aroma with dominant fruit character—cherries, strawberries, hints of melon, peach yogurt, citrus, cherry tomato, and baked goods. Outstanding balance and harmony in its aroma.
  3. Palate: Medium intensity, moderate acidity, expressive with a pleasant overall profile and good persistence. Dry taste with a light bitterness that enhances its freshness. The aftertaste confirms its fruity character.

The ancient San Rafael Valley, Real del Castillo—once the seat of the Northern Territory—revives its past of carriages, prospectors, and wild dreams of fortune.
Amid frozen winters and summers with undulating poplars nourished by the El Barbón creek, Ojos Negros once again reflects the gold, now sealed in a bottle—the soul of the grape, the fruit of the land, a gift from Viña Baradal.
