Viticulture & Vinification
- Vineyards aged between 20 and 40 years, planted on granitic, loose, and well-oxygenated soils.
- Manuel Formigo exclusively works with grapes from his own vineyards, ensuring complete control over the process.
- Manual harvest with rigorous grape selection at the vineyard.
Aging: Fermentation in stainless steel tanks at a controlled temperature of 16°C for 14 days. No malolactic fermentation, preserving the wine’s natural freshness and acidity.

Perfect with oily fish, raw seafood, appetizers, and grilled white fish.
Serving Temperature: Best enjoyed at 9°C to enhance its freshness.
Tasting Notes
- Appearance: Pale yellow.
- Nose: Citrusy, herbaceous, and mineral aromas, with notes of peach, quince, and delicate floral hints.
- Palate: Light and fresh, showcasing vibrant acidity and a crisp citrus character. The mineral notes lead to a long, persistent finish.
