EL GORDO DEL CIRCO VERDEJO

This 100% Verdejo from Rueda (13% ABV) is made from 30-year-old organic vines. It's macerated at low temperatures and fermented with free-run must for intense aromatics. Aged 5 months on fine lees, it offers a straw yellow color with greenish hues. The nose is elegant with herbaceous, white fruit, stone fruit, and citrus notes (fennel, hay, anise). The palate is broad, fresh, and balanced with bright acidity.

Grape Sourcing

Grapes come from organic vineyards approximately 30 years old, trellised and harvested with a combination of manual and mechanical methods. The soils are gravelly and sandy. The grapes originate from the areas of Olmedo, Valdestillas, and Segovia. Maceration is carried out at a low temperature for 24 hours, and fermentation occurs solely with the free-run must at a low temperature to extract a large quantity of aromatic compounds.

Aging

Aged on fine lees for 5 months, which provides the wine with great roundness on the palate and a powerful structure.

• Nose: Elegant, highly intense, with herbaceous notes, white and stone fruit, plus a spicy and citrus touch.
• Palate: Broad and delightful, a result of its aging on lees, with a freshness that brings balance and length on the palate.

Food pairing: 

With high acidity and a subtle bitterness, Verdejo makes a great food wine and palate cleanser. Try it with fish tacos, lime chicken, carnitas, and seitan stakes.

At sight it presents a yellow straw color, with greenish hues, clean, bright, and transparent. On the nose it is elegant, of great intensity, appearing at first balsamic and varietal aromas such as fennel, hay, cut grass and anise, which give way to hints of citrus and white fruit. On the palate it is broad, fresh, with intense acidity, keeping the perfect balance with sugar.
