Grape Variety: Grenache, Syrah and Cariñena

Very versatile in pairings. Spicy dishes, sautéed meats, chicken, duck, or pork with fruit sauces or with light sauces, seared tuna; hard aged cheeses; blue cheeses. Mexican food: Cecina de res, light moles, chiles rellenos or en nogada. Recommended temperature: 18°C (63-64°F).
Our most versatile wine. Ruby-colored red wine with cherry nuances, with aromas of candied red fruits: strawberries with cream, raspberry, as well as candied cherries, also showing light notes of aging: cloves, cinnamon, vanilla, dark chocolate. In the mouth, it is appreciated as a medium-bodied, clean, balanced, and polished wine with soft and velvety tannins, with a great persistence in the aftertaste.
The different varietals are fermented separately in small 2,000-liter stainless steel tanks at a temperature of 24°C to 28°C, keeping them with the skins for 12 to 15 days. The Grenache, which we seek to be the most expressive in the blend, comes from a vineyard in the La Grulla Valley, with sandy-loam soil, whose production does not exceed 5 tons per hectare. The Syrah comes from the same vineyard in Valle de La Grulla.
