Mistico is made up of a mixture of field grapes from various plots and terroirs with which Bichi works both in Tecate and Valle de Guadalupe. The grapes are harvested by hand during the month of September, destemmed (zaranda) and mechanically. They ferment in lagares and concrete vats, without temperature control and have fermentations of 15 to 25 days.
It is a light red wine, with aromas of red fruits. A stable wine that is easy to drink. A wine that helps us understand and initiate the wonderful world of natural wines. Unfiltered wine with sediment and with the minimum of added sulphites.
