Charcoal-grilled meat, pasta with light sauces, duck, pork with sweet sauces, lightly seasoned dishes, sautéed tuna, Mexican food: light moles, stuffed chiles. Recommended temperature: 18°C (63-64°F).
These three grapes tend to produce wines with an intense and full-bodied profile, and greater extraction and a somewhat late harvest are generally sought after. In collage, we seek to produce an intense wine but in a profile of its most jovial personality. The result is a wine with good acidity, complex, with a fruity profile contrasted with its spicy side.
