Tasting Notes:
- Visual: Straw yellow color with silver glitter, like a mirror.
- Nose: Fruity with a light lactic touch.
- Taste: Fresh, marine, with a deep finish.
Wine Profile:
Dry white wine, aged for two months in barrels, a mixture of Chardonnay from the San Vicente Valley and Chenin Blanc from the Bibayoff vineyard, Valle de Guadalupe. Chardonnay was harvested at 20 – 21º Brix, with fruit aromas of quince and golden apple. Chenin Blanc was harvested a little less ripe between 19 – 21º Brix, showing more vibrant acidity and white flower aromas. White collage – ch/ch is fresh, marine, with a deep finish. Straw yellow color with silvery shine, like a mirror. Bright, aromatically subtle, fruity with a light lactic touch, typical of the character of its lees in contact with the battonnage.
