Viticulture: The wine is the result of a farm with "High Environmental Value."
Vinification:
Mechanical harvest is done during the cold hours of the day (between 5 and 8 a.m.), de-stemming is done in the vineyard, and the grapes are crushed upon reception. This is followed by a cold skin maceration of 4 hours for the Muscadelle and 6 to 8 hours for the Sauvignon, a pneumatic pressing at low pressure (maximum 1.6 bar), settling under inert gas, and finally, alcoholic fermentation in thermoregulated stainless steel tanks between 15 and 17°C until the complete disappearance of sugars.
Aging: Aging on fine lees for two months with regular stirring, the wine then undergoes fining and stabilization, followed by pre-filtration, and is finally bottled at the château with a sterile filtration.
Tasting Notes:
- Brilliant with yellow nuances, it is marked by citrus and ripe exotic fruits.
- Its grape varieties give it a round mouthfeel with a beautiful aromatic persistence.
Pairing: It pairs perfectly with grilled fish, crustaceans, shellfish, and asparagus. It is also highly appreciated as an aperitif.
Recommended Service Temperature: 8 and 10°C (46 - 50°F)
