Vinification and Aging: Aging lasts for 15 months. Malolactic fermentation is carried out in barrels. The first two months of aging are on the lees.

2. Aromas: Aromas of blackcurrant mixed with apricot crunch and fresh grape.
3. Palate: The attack is broad, round, sustained by aromas of red fruits and tannic sweetness.

Château de Pennautier is a vineyard located in the heart of the AOP Cabardès, a few kilometers from Carcassonne. Its terroir is unique, combining Mediterranean warmth with Atlantic influence and mountain freshness. This allows for the association of Atlantic and Mediterranean grape varieties. The vineyard began its conversion to organic farming in 2019^.

Since 1620, Château de Pennautier has been at the heart of the history of Languedoc wines, with 12 generations succeeding one another in the production of exceptional wines. Nicolas de Lorgeril and his wife, Miren de Saint Chamas, have grown the company since 1987, which now owns 6 estates with 250 hectares of vines. These vineyards represent the most beautiful terroirs of Languedoc and Roussillon. Respect for the terroir and the environment is fundamental to the family's work, with estates that operate under organic and integrated farming methods.
