Tasting Notes:

The wine has a clear straw color with green highlights.
It has aromatic compounds of thiol origin (passion fruit, grapefruit, currant, cassis) that are accompanied and complemented by subtle notes of fig, apple blossom, pineapple, melon. There is no lack of a more terpenic aromatic layer, with elegant citrus notes.
In the palate highlights the acidic sensation, important but pleasant. This is the structure of the wine, which then fills the palate, with a good length and a clean and precise finish. The flavors agree with the aromas, and are shown wrapped in the acid structure.

Wine Profile:
Vinification: For the Reserve line, 100% of the grapes were harvested by machine, which favors the maceration of the skins and a greater transfer of aromatic compounds to the must. After harvesting, the grapes were destemmed and underwent a short (6-8 hours) maceration in the pneumatic press. Then only the flower must was drained, approximately 60% of the yield, separating press cuts.
The wort was cleaned with static decantation before being racked with different ranges of turbidity (50-120 NTU) to the fermentation vats.
The musts were inoculated with selected yeasts and fermented at temperatures between 14°C and 18°C. After fermentation, the young wine was left for a few weeks on its lees without stirring before blending. After mixing, the wine was clarified, cold stabilized and filtered. The first bottling took place on July 7. Total production was 38,000 boxes.
