Viticulture & Vinification

Caruso & Minini carefully selects hand-harvested Catarratto grapes from vineyards in the Marsala region, located at 350 meters above sea level. The vines, facing north and northwest, grow in calcareous-clayey soils and are cultivated using the espalier training system, with a density of 3,500 plants per hectare.

The winemaking process begins with the selection and transport of the bunches to the cellar, where they are destemmed and pressed. Fermentation starts naturally due to native yeasts present in the grape skins. The wine undergoes over 20 days of maceration at a controlled temperature of 15°C, during which the skins slowly release color, structure, and aromas. The wine then matures for four months in stainless steel tanks.

Appearance: Golden yellow with delicate copper hues.
Nose: Intense bouquet with hints of candied citrus fruits and Mediterranean herbs.
Palate: Harmonious balance between salinity and tannins, delivering freshness and an elegant, persistent finish.
